Really easy Honey & Peanut Butter cookies.

Melt 5 tablespoons of butter.

Mix in a generous 1/2 cup of honey.
Add a generous 1/2 cup of peanut butter (crunchy or smooth) and mix.
Add 2 cups of self raising flour and one egg - mix it all together. 

Take a heaped desert spoon full of mixture, roll into a ball, place on a baking tray. For that added homely touch, wet a fork and press it onto the top of the biscuit, to flatten it a little.

Bake for 15 - 20 minutes, at 180 degrees centegrade depending on your oven.

Honey improves their keeping ability, apparently. Though they never seem to last longer than a few days in my house! (As my chubby face will attest!)


My version of Indonesian "Rotty-cookus" cake.(You had better do something with all those eggs, or you'll have rotten eggs!) With over producing chooks, I often have eggs piling up. This 7 egg cake uses some up nicely!

Mix a generous cup and a half of honey with about 1/3 of a cup of olive oil.

Add 1 and a half cups of self raising flour. Mix.
Add 7 eggs. Mix.
Grate in 2 carrots. Mix.
Pile in 4 generous cups of mixed fruit (a 1 kilo bag).
Add 2 generous cups of pitted dates.
Mix all together. 

Makes one large cake and 24 small muffins.  (Or two cakes.)

Bake large cake for about 45 mins at 180 degrees c.

(Or do what I did - accidentally turn oven off after 25 mins, go outside and play with the kids, come back in after half an hour, turn it back on for another 25 mins! Takes a lot to ruin this cake.)

Serve with custard. 

Optional extras: cinnamon, a tin of pineapple, 2 cubed apples.


Honeyed Carrots
Cut fresh carrots into small chunks.  Boil in hot water till soft - but not mushy.  Depending on the carrots and your stove, may take 30 minutes.

Drizzle over enough honey to glaze the carrots.  Serve with lashings of whipped potato with chives.


Spicy, fruity, honey cookies.

Melt 5 tablespoons of butter.  
Mix in a cup of honey.  
Mix in two eggs, 2 teaspoons of cinnamon and 1 teaspoon of nutmeg.  
Add 2 cups of self raising flour.
Add two cups of mixed dried fruit.

Put a heaped teaspoon of mixture onto baking paper on a tray.  (Allow a little room for them to spread.)

Bake at 180 degree celsius for 15 minutes.

This is enough for quite a huge batch of cookies.
